Down in the swamps of Southern Louisiana lives one of the best cultures in the World in my opinion. Cajuns are a humble people who know how to have a good time without all the excesses of life. Some would call it simplicity. When it comes to food there’s no exception. This simple meal consists of Boudin which is a Cajun sausage stuffed with rice, pork, green onions, and of course cayenne pepper. On the side, we have another favorite which is rice, okra, and tomatoes. Delicious!
