Pollo De Tinga Tostadas
2014 Albert Moyer, Jr.
Recipe:
Pre-made tostada shells
Roast one whole chicken with Oregano, Cumin, and Salt Rub
Once chicken is done and cools, peel all meat from chicken and reserve.
Blend in a blender, three tomatoes, one can tomato sauce, and four chipotle peppers in adobo sauce.
Add about two tablespoons brown sugar, and a 1/2 teaspoon of salt to sauce as it blends.
In a skillet, saute one chopped onion for five minutes in about four tablespoons of Olive oil.
Add the roasted chicken meat, along with the sauce. Blend and warm.
To build tostada, add some fresh mixed greens on top of shell, and then about 1/2 cup of Tinga chicken.
Sprinkle with some grated fresh Mexican white cheese and chopped fresh cilantro.
Finally, pour a little Mexican crema over the top from side to side.
Enjoy!
This will serve at least eight people.

Ok, foodies! Here is a wonderful meal. I recently checked out Wichcraft by Tom Colicchio from the library. It is the ultimate sandwich book in my opinion. Also, I checked out Rosalind Creasy’s Recipes From The Garden. The recipes to both of these dishes are available in these books. Happy cooking!

Shifting Sands
2014 Albert Moyer, Jr.
For the sands are shifting
In an incomprehensible way.
Our moral fabric stripped away.
People talk, walk, and wonder,
” Why are people suffering?”
They cry in agony from the pain.
Their salaries are low,
And the violence is high.
Yet they fail to look up,
And humble themselves to the most high.
For the reprobate mind,
Their eyes are blind.
For they will never see the signs.
They run crazy like ants,
From a mound that has been kicked,
Listening to false prophets,
Only to be tricked.
For their pain is real,
It cannot be denied.
Yet it could all change,
If they ask the Lord,
To be on their side.
Here is a new song that is positive and uplifting for those that have been bullied, abused, hurt, etc.

I’m Not Your Suicide by Michael Sweet
They say that time can heal the pain, the scars
Forgive, forget – that only goes so far
You were someone I opened my heart to
Till I asked you for help, you became someone else
I was sanctified – I used to feel justified
Only to be crucified, by you – by you
My life has just begun, I’m standing in the shining sun
I’m not gonna run and hide, lay down and die
No I’m not your suicide
The stones you throw might bruise my bones, my skin
Reap what you sow, the truth will show in the end
I won’t break under pressure – I wouldn’t give you that pleasure
I was sanctified – I used to feel justified
Only to be crucified, by you – by you
My life has just begun, I’m standing in the shining sun
I’m not gonna run and hide, lay down and die
No I’m not your suicide
Are you so pitiful that you want to be me?
I was sanctified – I used to feel justified
Only to be crucified, by you – by you
My life has just begun, I’m standing in the shining sun
I’m not gonna run and hide, lay down and die
No I’m not your suicide
