A nice handful of organic corn tortilla chips
A nice handful of meatless crumbles
A nice handful of shredded Monterrey Jack and Cheddar cheese blend
Black Bean and Corn Pico De Gallo
A little green salsa
A dollop of sour cream (optional)
Layer the chips, meatless crumbles, and cheese and microwave until melted. Top other ingredients. Enjoy!
Over the holidays, I grabbed my cell and took a photo of my parent’s beautiful orange tree. Unfortunately, these oranges are bitter. They look beautiful, but the only serve to work as a marinade for meat, or one could make a bitter marmalade from them. I can only stare at them, enjoy their beauty, and think, “Why are you not sweet?”

As I looked outside this evening, I noticed the doves starting to settle in, fluffing their feathers, and preparing for the 19 degree overnight temperatures. This is really cold for Houston, Texas. It got me to thinking,”Look at them! They will sit overnight, fluffed, warm, and survive. God provides a way for them.” We are much more valuable, so don’t worry. Your needs will be covered. It may look as if all hope is gone, but I tell you just as these birds survive, so will you in your toughest times. Never lose faith!

New International Version (NIV) 26 Look at the birds of the air; they do not sow or reap or store away in barns, and yet your heavenly Father feeds them. Are you not much more valuable than they?
This is one of my favorite dishes to cook, especially when it is cold and you need extra protein and energy.
Here is the recipe for:
Irish Stew
Ingredients:
1.3kg/3 lbs boneless lamb or beef cut into chunks.
(It’s more authentic if you use lamb.)
1.5ml/1 tbsp. of vegetable oil
3 onions
1 lb of carrots
900 ml/3 3/4 cups water
10 red potatoes quartered
3 nice fresh Thyme sprigs or more to taste
3 tbsp. of butter
1 tbsp. of chopped fresh Italian parsley
salt and pepper to taste
Instructions:
1. Heat oil in large casserole or pot. Brown meat on all sides. Remove.
2. Quarter the onions, and slice the carrots about one inch thick. Cook them in pot for around five minutes until onions start to brown.
3. Return meat to pot with water, reduce heat, and simmer for one hour.
4. Add potatoes to pot with Thyme and cook one hour longer.
5. Turn stew off and let settle for ten minutes. Stir in butter.
6. Serve into bowls and top with fresh chopped parsley.

Billy Bob’s, located in Fort Worth, Texas, is the largest honky-tonk in the world at around 100,000 square feet. The club can hold close to 6,000 patrons. This club has activities, food, live music, and more bars than the most serious drinker can handle. To add to all that excitement, they have live bull-riding in the club. The club is notorious for attracting some of the biggest names in the entertainment industry. Inside the handprints of stars can attest to that. The place has a slight museum quality to it along with it being a spot for many films. It is a great place to have a great time with friends or to meet some new ones.
