One of the most beautiful places in Texas in my opinion is Colorado Bend State Park in Bend,Texas. You can read about it here. http://www.tpwd.state.tx.us/state-parks/colorado-bend

It has some of the best animal viewing, hiking, mountain biking, kayaking, tubing, photography opportunities, or whatever your mind can imagine.

As much as we know about the world and science, we still do not know everything. My favorite new discovery is this glow-in-the-dark cockroach. It reminds me of a Jawa from Star Wars. The Lesula monkey with human-like face is pretty cool too. There is so much in the world to take photos of!

This dish is influenced by both Japanese and Korean cuisine. It consists of teriyaki beef short ribs, japanese eggplant with mixed vegetables and garlic, and rice topped with a little bit of Sriracha hot sauce. I don’t have a recipe because I make most of my dishes up in my head. After you cook so long, you get to where you know how to balance the seasoning and mix things up.
