The other day, I was in a break room during lunch and I noticed the many foods being consumed.

In one chair, I see a person who is grossly overweight eating M&M’s, Twinkies, and a Coke.

In another chair, I see a person drinking a Monster energy drink and eating chips while complaining about a lack of energy.

In yet another chair, I hear a person talking about losing weight, while they consume a chemically laden Lean Cuisine along with a diet Coke.

These observations are made quite often by me, and most of the time, I am left shaking my head.

To lose weight one needs exercise. There are no magic foods or drinks. In fact, processed food is the worst for anyone trying to lose weight.

For energy, one needs sleep, exercise, vitamins, and minerals. None of these are best obtained from a can, except maybe some vitamins or minerals. The ideal situation is making time for sleep, exercise, and eating whole foods.

When a person fails to make time for sleep, exercise, or eating properly, that speaks volumes about that person. If a person doesn’t make time for their own health and body, it makes you wonder whom else will they cheat? If they will cheat themselves, they will cheat you too.

What can I say? I have had spinach on the brain lately.

A fellow blogger http://busymindthinking.com/ asked me if I actually get close to gators when taking their photos. The answer is,”Yes!” Gators are not the monsters people think they are. Gators are actually quite docile, and are as curious about us, as we are of them. I often find they are quite afraid of humans. Here I am up close and personal with some gator friends. The ideal distance is 30 feet or more away from them. I might be cheating that a little here.

Ask me to do this for crocodiles and we have,”NO DEAL!” That is a totally different reptile with more aggressive tendencies.

Browsing through my photos, I came across this macro photo I took of some seriously parched earth. It inspired me to write a haiku. Texas went through a monster drought two years ago and has not recovered to this day. The rain has been coming, but we need so much more. Remember! Water is life!

Parched Earth

The ground cracks open.

Life around dries up and dies.

Water the savior.

It’s always nice to walk along a path and run into a reptilian friend.  It makes for great photo opportunities and observation. This young, or possibly female gator, was warming in the Texas sun along Elm Lake at Brazos Bend State Park.

This cactus bloom photo was taken by me in New Braunfels, Texas.

In Texas there is nothing better than a sweet juicy piece of watermelon on a hot summers day. My favorite melon comes from Hempstead, Texas at Dilorio’s farm.

This photo was taken right outside the farmer’s market.

This photo was taken inside. Yum!

This is a quick, tasty, healthy sandwich that I love to make on my panini press. The summer is here, so light food is great when the temps top out over 90. All you need is some mayonnaise, whole wheat bread, mushrooms, tomato, fresh basil, and your choice of cheese and seasonings. I prefer Muenster or Mozzarella for my cheese and a little lemon pepper for season.

The summer is a great time to grow fresh basil which I do.

This is how you should lay everything out on your bread before you place the two slices together.

This is how it should look off the panini press with a side of veggie chips. A quick, easy, healthy, yummy panini sandwich.
