I have had so much BBQ in my life that I can hands down say the Pecan Lodge has a perfect balance of smoke, sauce, and tenderness to the meat. The service is excellent even when crowds wrap around the exterior. One unique thing is fried chicken on the platter instead of BBQ chicken. I have never had that at any BBQ establishment, and I must say the fried chicken is superbly crispy, seasoned, and juicy. So a friend says,” I haven’t seen any food photos in awhile. Do you still cook?” I cook almost daily. Ethic, Americana, you name it. I love food and food is life. Here are a few dishes I have made recently. Tacos with Pico De Gallo, Guacamole, and Salsa Verde, Grilled Catfish with peas and couscous, Chicken Fried Steak with Butter Gold Mashed Potatos and Peas, Beef Empanadas with Green Banana Curry, Picadillo with Platanos, Black Beans, Rice, and a Fried Egg, and Fried Chicken with Okra and Corn. Homemade Pizzas

There is nothing better than putting your own pizzas together using fresh ingredients from the garden.
I used my own fresh basil for the Margarita pizza which is basically pizza sauce, tomatoes, basil, and mozzarella.
The Hawaiian pizza has fresh pineapple which is 100 times better than canned. The Hawaiian has pizza sauce, fresh pineapple, Canadian Bacon, and mozzarella.
The last one is my take on a supreme with pizza sauce, Italian sausage, Pepperoni, fresh mushrooms, onions, garlic, yellow pepper, and black olives.

School Food Scam- United States

Everyday all over America children are wasting free food that is provided by tax payers. The food manufacturers are in bed with the school systems and government. They sell units and receive credits for each unit. In other words, money. In one school alone, anywhere between 10 to 20 gallons a milk go to waste daily, and close to 50 or more pounds of food. When you add up how many schools are giving away breakfast, lunch, and dinner, this adds up to a ton of money for food manufacturers, and a lot of wasted tax dollars. Worse yet, this food could feed the truly hungry.
I took this photo before this food was thrown away. Several of these plates went into the trash. Perfectly good food. If you are homeless or hungry, a school dumpster is a great place for food. I wish American’s would get pissed off like Martin Luther King, Jr. or Ralph Nader, and rally against the crime of a broken system. It is ridiculous!!
Irish Stew

This is one of my favorite dishes to cook, especially when it is cold and you need extra protein and energy.
Here is the recipe for:
Irish Stew
Ingredients:
1.3kg/3 lbs boneless lamb or beef cut into chunks.
(It’s more authentic if you use lamb.)
1.5ml/1 tbsp. of vegetable oil
3 onions
1 lb of carrots
900 ml/3 3/4 cups water
10 red potatoes quartered
3 nice fresh Thyme sprigs or more to taste
3 tbsp. of butter
1 tbsp. of chopped fresh Italian parsley
salt and pepper to taste
Instructions:
1. Heat oil in large casserole or pot. Brown meat on all sides. Remove.
2. Quarter the onions, and slice the carrots about one inch thick. Cook them in pot for around five minutes until onions start to brown.
3. Return meat to pot with water, reduce heat, and simmer for one hour.
4. Add potatoes to pot with Thyme and cook one hour longer.
5. Turn stew off and let settle for ten minutes. Stir in butter.
6. Serve into bowls and top with fresh chopped parsley.
Enjoy!

Here are some photos that show there are differences. Often there is color and size differences. People are being super-sized by the chemicals added to their food. Buy and eat organic! Don’t be misled by those who want your money, but will let your health fall apart.
