Just to the North of Houston is a small town called Conroe. Conroe is home to Lake Conroe, one of the best fishing and recreational lakes about 40 miles north of Houston. Right off Hwy 105, in Conroe, is one of the best catfish restaurants in the state of Texas. This restaurant is called Vernon’s Kuntry Katfish. http://www.kuntrykatfish.com/

Not to be long on words, I will let the photos do the talking, but I can tell you this, you will not find better prices, and better catfish anywhere in Texas. The green tomato relish and hushpuppies are out of this world. Oh, and the waitresses and staff, fantastic!

This is a quick, tasty, healthy sandwich that I love to make on my panini press. The summer is here, so light food is great when the temps top out over 90. All you need is some mayonnaise, whole wheat bread, mushrooms, tomato, fresh basil, and your choice of cheese and seasonings. I prefer Muenster or Mozzarella for my cheese and a little lemon pepper for season.

The summer is a great time to grow fresh basil which I do.

Tonight for dinner I have an Indian Sampler plate.

Indian food is so fragrant, spicy, rich, flavorful, and euphoric!

Starting from top left going in a clockwise motion, there is Mutter Paneer which is peas in a gravy of mild spices with Indian Cheese, Baigan Bharta which is smoked and mashed eggplant with onions, garlic, and spices, Palak Paneer which is spinach and Indian cheese, Kadhi Pakoda which is gram flour dumplings cooked Punjabi style in yogurt and Indian spices, Dal Makhani which is black lentils and kidney beans cooked in a buttery gravy of tomatoes, onions, ginger, and garlic, Mutter Methi Malai which is fenugreek and sweet peas cooked in a cashew sauce with mild Indian spices, Basmanti Rice, and Masala Naan bread.

If you have never eaten Indian food you are denying yourself a life’s pleasure.

Last night I cooked one of my favorite dishes,  Rock Cornish Hen. I have been behind on my food photos, but you can rest assured I am always cooking something great. As sides, I cooked a wild rice pilaf and some steamed broccoli.

Sometimes poems are inspired by the simplest things like being hungry and awaiting lunch.

Some of my favorite food in all the World is Mediterranean/ Lebanese, Greek, Turkish, etc. Here is a plate I put together tonight inspired by the Mediterranean region.

It consists of Sardines, Marinated Octopus, Marinated Vegetables with Feta, Hummus, Baba Ganoush, Dolmathes, and Pita bread.

Is there any wonder why we have more autism, A.D.D., food allergies, asthma, etc. The disease list get’s longer by the day. The drug companies love it too.

I would rather have beans, rice, tomatoes, potatoes, squash, corn, carrots, lettuce, onion, garlic, swiss chard, spinach, radishes, mustard greens, collard greens, peaches, apples, mangos, guavas, bananas, oranges, lemons, limes, strawberries, raspberries, blueberries, grapes, cashews, almonds, avocados, jalapenos, etc. You get the picture. Nature food! I am sure that you recognize this list better than the list above as edible food.

It pays to read your food labels when you by food. In Texas, Blue Bell Ice Cream is a legend and everyone swears by it except this Texan. I prefer Haagen Daz because it is natural, true, ice cream.

Cream, skim milk, strawberries, sugar, egg yolks

Let’s examine Blue Bell Strawberry’s ingredients.

Oooops! Blue Bell doesn’t want you to know. It’s not online and their ingredients are subject to change.

So how about another popular brand Blue Bunny? Let’s see what’s in their strawberry ice cream.
